- 2 eggs, beaten
- Vegetable oil for frying
Instructions
- Prepare the Sauce: Combine BBQ sauce, orange marmalade, and soy sauce in a medium pot. Heat on low for 20 minutes, stirring occasionally.
- Prep the Chicken Coating: Place beaten eggs in one bowl and flour or cornstarch in another.
- Coat the Chicken: Dip each chicken cube in egg, then roll in the flour mix to coat.
- Fry the Chicken: Heat 1/2 inch of oil in a frying pan over medium-high heat. Fry chicken for 3โ5 minutes per side until golden and cooked through. Drain on paper towels.
- Combine Chicken and Sauce: Allow chicken to cool slightly, then toss in warm sauce until coated.
- Serve: Serve the chicken over white rice, optionally adding cooked green peppers or broccoli on the side.
