- 1 lb sweet Italian sausage (casings removed)
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 tbsp olive oil
- Salt & black pepper, to taste
- Pinch of red pepper flakes (optional)
Instructions
- Cook pasta in salted boiling water until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Cook sausage until browned, breaking it apart.
- Stir in garlic and sun-dried tomatoes; cook until fragrant.
- Pour in cream, then stir in Parmesan until melted into a smooth sauce.
- Add spinach and pasta; toss until pasta is coated and spinach is wilted.
- Season with salt, pepper, and optional red pepper flakes. Serve hot with extra Parmesan.
