Description

Ingredients

  • 12 oz penne pasta (or rigatoni)
  • 1 lb sweet Italian sausage (casings removed)
  • 3 cloves garlic, minced
  • 1 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • Salt & black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Cook pasta in salted boiling water until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Cook sausage until browned, breaking it apart.
  3. Stir in garlic and sun-dried tomatoes; cook until fragrant.
  4. Pour in cream, then stir in Parmesan until melted into a smooth sauce.
  5. Add spinach and pasta; toss until pasta is coated and spinach is wilted.
  6. Season with salt, pepper, and optional red pepper flakes. Serve hot with extra Parmesan.

Notes

  • Swap sweet Italian sausage for spicy if you like heat.
  • Add mushrooms or zucchini for more vegetables.
