- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, sliced
- 3 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 cup green beans, chopped
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- 1 cup cooked pasta or rice (optional)
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion, carrots, and celery. Cook for about 5 minutes, or until the vegetables are tender.
- Stir in the minced garlic and cook for another minute.
- Pour in the broth and add the diced tomatoes, green beans, dried thyme, and dried basil.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
- Season with salt and pepper to taste. If you like, you can add cooked pasta or rice at this stage.
- Serve hot, garnished with fresh parsley.
Notes
Feel free to add your favorite vegetables like zucchini or spinach for extra nutrition. For a creamier soup, blend a portion of the soup and mix it back in.
