Description

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 1 cup cooked pasta or rice (optional)
  • Fresh parsley for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion, carrots, and celery. Cook for about 5 minutes, or until the vegetables are tender.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the broth and add the diced tomatoes, green beans, dried thyme, and dried basil.
  5. Bring the mixture to a boil, then reduce the heat and let it simmer for about 20 minutes.
  6. Season with salt and pepper to taste. If you like, you can add cooked pasta or rice at this stage.
  7. Serve hot, garnished with fresh parsley.

Notes

Feel free to add your favorite vegetables like zucchini or spinach for extra nutrition. For a creamier soup, blend a portion of the soup and mix it back in.
