Apple Layer:

  • 2 large eggs
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup Greek yogurt (or sour cream)

Crumble Topping:

  • ½ cup all-purpose flour
  • ⅓ cup brown sugar
  • 1 tsp cinnamon
  • Pinch of salt
  • ¼ cup cold unsalted butter, cubed
  • Optional: 2 tbsp rolled oats or chopped pecans

Instructions

  1. Preheat oven to 350°F (175°C). Grease and line a 9-inch baking pan.
  2. Make the apple layer: In a bowl, toss diced apples with cinnamon, brown sugar, and lemon juice. Let sit to soften.
  3. Prepare cake batter:

    • Cream butter and sugar until fluffy.

    • Beat in eggs one at a time, then add vanilla.

    • In a separate bowl, mix flour, baking powder, baking soda, and salt.

    • Add dry mix to wet in batches, alternating with yogurt.

    • Gently fold in half of the apple mixture.

  4. Make crumble topping:

    • Mix flour, brown sugar, cinnamon, and salt.

    • Cut in cold butter until crumbs form. Add oats or nuts if using.

  5. Assemble:

    • Spread half of the batter into the pan.

    • Top with remaining apple mixture.

    • Add remaining batter, then sprinkle on the crumble topping.

  6. Bake for 45–50 minutes or until a toothpick inserted comes out clean.
  7. Let cool for 15 minutes before serving.

Notes

  • For added crunch, include chopped pecans in the topping.
  • Make it dairy-free using plant-based yogurt and vegan butter.
