Description

A rich and flavorful cake made with dried fruits, nuts, and spices, perfect for gifting or holiday tables.


Ingredients

  • 2 cups mixed dried fruits (raisins, currants, cherries)
  • 1 cup nuts (walnuts, almonds, or hazelnuts), chopped
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 4 large eggs
  • 1/2 cup orange juice
  • 1/4 cup rum
  • Zest of 1 lemon
  • Zest of 1 orange

Instructions

  1. Preheat the oven to 325ยฐF (160ยฐC). Grease a loaf pan.
  2. Toss the dried fruits and nuts with a small spoon of flour to prevent them from falling.
  3. In a bowl, mix the flour, baking powder, cinnamon, nutmeg, and cloves.
  4. In a large bowl, beat the butter and brown sugar until light and soft.
  5. Add the eggs one at a time, beating each in well. Stir in the orange juice, rum, and zest.
  6. Add the flour mix little by little and mix until just combined.
  7. Fold in the floured fruits and nuts until they are evenly distributed.
  8. Pour the batter into the prepared pan and smooth the top.
  9. Bake for 60 to 75 minutes, or until a toothpick comes out clean.
  10. Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Notes

For added moisture, soak dried fruit in orange juice or rum for an hour before use. Ensure that the cake cools well before slicing to maintain neat pieces.
