Description

A delightful dish combining tender chicken thighs with a creamy, zesty sauce, perfect for comforting dinners.


Ingredients

  • 1 cup Whole-Egg Mayonnaise (or Greek yogurt)
  • 1/2 cup Sweet Chili Sauce
  • 1 tablespoon Sriracha (optional, adjust to taste)
  • 2 tablespoons Honey
  • 2 tablespoons Lime Juice
  • 1.5 pounds Boneless Chicken Thighs (or chicken breasts)
  • 1 tablespoon Sweet Paprika (or smoked paprika)
  • 1 teaspoon Onion Powder (or fresh onions)
  • 1/2 teaspoon Black Pepper
  • 1 tablespoon Tamari or Soy Sauce
  • 1 tablespoon Brown Sugar (or coconut sugar)
  • 2 tablespoons Olive Oil
  • 2 tablespoons Spring Onion (chopped)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together the mayonnaise, sweet chili sauce, Sriracha, honey, lime juice, sweet paprika, onion powder, black pepper, tamari (or soy sauce), and brown sugar.
  3. Add the boneless chicken thighs to the bowl and ensure they are well-coated with the sauce mixture.
  4. Drizzle olive oil in a baking dish and place the chicken inside, spreading it out evenly.
  5. Bake in the preheated oven for about 25 minutes, or until the chicken is fully cooked and golden.
  6. Once done, sprinkle chopped spring onions on top before serving.

Notes

For extra flavor, marinate the chicken in the sauce for a few hours before baking. Adjust Sriracha to suit your taste.
