Description

Ingredients

  • 1 lb boneless, skinless chicken breast
  • 1 cup cooked rice (white, brown, or cauliflower)
  • 1 cup mixed veggies (broccoli, bell peppers, carrots)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Instructions

  1. Cook rice according to package instructions and set aside.
  2. Cut chicken breast into bite-sized pieces and season with salt and pepper.
  3. Heat olive oil in a skillet over medium-high heat, then sautรฉ chicken until golden brown and cooked through, about 6-8 minutes.
  4. In a small bowl, mix sauce ingredients: mayonnaise, sriracha, honey, garlic powder, and lime juice. Adjust to taste.
  5. Add mixed veggies to the skillet and cook for an additional 2-3 minutes until just tender.
  6. Remove skillet from heat, pour sauce over chicken and veggies, and stir to coat.
  7. Serve over rice, garnished with extra sriracha or green onions if desired.

Notes

For extra sauce lovers, make a batch to use on other dishes. Experiment with different vegetables and consider adding toasted sesame seeds for texture.
