- 2 pounds beef chuck, cut into chunks
- 3 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 carrots, sliced
- 4 potatoes, cubed
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the beef chunks and brown on all sides. Remove and set aside.
- In the same pot, add the onion and garlic; sautรฉ until softened.
- Stir in the tomato paste, then return the beef to the pot.
- Add the carrots, potatoes, beef broth, red wine (if using), thyme, bay leaf, salt, and pepper.
- Bring to a boil, then reduce heat and let simmer for about 90 to 120 minutes, or until the beef is tender.
- Remove the bay leaf before serving. Enjoy your hearty beef stew!
Notes
Browning the beef well adds a lot of flavor. Feel free to add other vegetables for extra nutrition.
