Description

A warm, comforting beef stew perfect for cold days, featuring tender beef and hearty vegetables.


Ingredients

  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup diced tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons flour (optional, for thickening)

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the beef cubes and brown them on all sides.
  2. Remove the beef and set aside. In the same pot, add the onion and garlic, cooking until softened.
  3. Return the beef to the pot and add the carrots, potatoes, beef broth, diced tomatoes, Worcestershire sauce, thyme, and paprika. Season with salt and pepper.
  4. Bring to a boil, then reduce heat to low and cover. Let it simmer for about 90 to 120 minutes or until the beef is tender.
  5. If desired, mix flour with a little water to create a slurry and stir it into the stew, cooking for an additional 10 minutes.
  6. Serve hot in deep bowls and enjoy your comforting bowl of beef stew.

Notes

For a thicker stew, use the flour slurry method. This stew can be made in a slow cooker as well.
