Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 3 carrots, sliced
  • 3 potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped fresh herbs (parsley, chives, etc.)
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 cup butter, melted
  • 1/2 cup milk

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
  2. Add onions and garlic, and sautรฉ until fragrant.
  3. Stir in carrots, potatoes, beef broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 90 to 120 minutes until the beef is tender.
  4. For the dumplings, in a bowl, mix flour, baking powder, cheese, chopped herbs, and melted butter. Gradually add milk until a dough forms.
  5. Drop spoonfuls of dough into the simmering stew and cover. Cook for 15-20 minutes until the dumplings are fluffy and cooked through.
  6. Serve hot and enjoy the comfort!

Notes

Consider adding a splash of red wine for extra flavor. Use favorite vegetables or leftovers to customize the stew.
