- 2 pounds beef chuck, cut into 1-inch cubes
- 1 tablespoon olive oil
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 1 teaspoon thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 1 cup shredded cheddar cheese
- 1/2 cup chopped fresh herbs (parsley, chives, etc.)
- 1 1/2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup butter, melted
- 1/2 cup milk
Instructions
- In a large pot, heat olive oil over medium heat. Add the beef cubes and brown on all sides.
- Add onions and garlic, and sautรฉ until fragrant.
- Stir in carrots, potatoes, beef broth, thyme, rosemary, salt, and pepper. Bring to a boil, then reduce heat and simmer for 90 to 120 minutes until the beef is tender.
- For the dumplings, in a bowl, mix flour, baking powder, cheese, chopped herbs, and melted butter. Gradually add milk until a dough forms.
- Drop spoonfuls of dough into the simmering stew and cover. Cook for 15-20 minutes until the dumplings are fluffy and cooked through.
- Serve hot and enjoy the comfort!
Notes
Consider adding a splash of red wine for extra flavor. Use favorite vegetables or leftovers to customize the stew.
