Ingredients

- 2 lbs beef chuck, cut into 1-inch cubes
- 4 cups beef broth
- 3 carrots, sliced
- 3 potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon rosemary
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Remove beef and set aside.
- In the same pot, add onions and garlic, sautรฉ until fragrant.
- Stir in tomato paste, thyme, rosemary, salt, and pepper.
- Return beef to the pot and add carrots and potatoes.
- Pour in beef broth, bring to a boil.
- Reduce heat, cover, and simmer for 90 to 120 minutes or until beef is tender.
- Serve hot.
Notes
For extra flavor, consider marinating the beef in red wine before cooking. Adjust seasoning to your taste and feel free to add other vegetables.
