Description

A moist and flavorful loaf of banana bread perfect for breakfast, snacks, or dessert.


Ingredients

  • 34 ripe bananas (about 2 cups mashed)
  • 1/3 cup salted butter (melted)
  • 3/4 cup granulated sugar
  • 1 large egg (beaten)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt
  • 1 1/2 cups all-purpose flour
  • 1 cup chopped walnuts (or chocolate chips)

Instructions

  1. Preheat oven to 350°F (177°C) and lightly grease or flour an 8.5×4.5-inch loaf pan.
  2. In a large bowl, combine mashed bananas with melted butter, then add sugar, egg, and vanilla. Stir well.
  3. Sprinkle baking soda, baking powder, cinnamon, and salt over the mixture and stir to combine.
  4. Add flour and walnuts or chocolate chips, stirring just until no streaks of flour remain. Pour batter into the prepared loaf pan.
  5. Bake for 50-60 minutes until a knife inserted in the center comes out clean. Cool in the pan for 10 minutes, then turn onto a wire rack to cool completely.
  6. Slice into 10 thick slices and serve.

Notes

Use very ripe bananas for best flavor. Don’t overmix the batter to keep the bread light and fluffy.
