Soft, gooey, and packed with sweet spiced flavor, these Biscoff Cookie Butter Cinnamon Rolls are the perfect indulgent breakfast or brunch treat. Made with a fluffy homemade dough, a caramelized cookie butter swirl, and topped with a silky glaze—every bite is pure heaven.

Dough:

  • 3 cups all-purpose flour
  • 1 cup warm whole milk (110°F)
  • 1 packet instant yeast (2¼ tsp)
  • ¼ cup granulated sugar
  • ¼ cup melted unsalted butter
  • 1 large egg
  • ½ tsp salt

Filling:

  • ¾ cup Biscoff cookie butter
  • ¼ cup brown sugar
  • 1 tbsp ground cinnamon

Glaze:

  • ½ cup Biscoff cookie butter
  • 1 cup powdered sugar
  • 3 tbsp milk (adjust for texture)
  • ½ tsp vanilla extract

Instructions

  1. In a bowl, combine warm milk, 1 tbsp sugar, and yeast. Let it bloom for 5–10 minutes.
  2. In a stand mixer, add the milk mixture, melted butter, egg, remaining sugar, and salt. Mix well.
  3. Gradually add flour until a dough forms. Knead for 8–10 minutes until smooth and elastic.
  4. Transfer tRoll out dough into a 12×18-inch rectangle on a floured surface.

  6. Spread cookie butter evenly across the dough. Sprinkle with brown sugar and cinnamon.
  7. Roll tightly from the long side. Cut into 8–10 equal rolls.

  9. Bake at 350°F (175°C) for 20–25 minutes until golden brown.
  10. Whisk glaze ingredients until smooth and pour over warm rolls before serving.

Notes

  • For a vegan version, use almond milk, vegan butter, and a flax egg (1 tbsp flaxseed + 3 tbsp water).
  • Rolls can be prepped the night before and baked in the morning.
  • Add crushed Biscoff cookies, chopped pecans, or a drizzle of caramel for an extra treat.
