Description

A soft, rich cheesecake topped with fresh blackberries, perfect for special occasions or a calm night in.


Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • 1 cup fresh blackberries

Instructions

  1. Preheat the oven to 325ยฐF (160ยฐC).
  2. In a bowl, mix graham cracker crumbs, 1/2 cup sugar, and melted butter.
  3. Press the mix into the bottom of a 9-inch springform pan.
  4. In a large bowl, beat cream cheese, 1 cup sugar, and vanilla until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until well mixed.
  7. Gently fold in the fresh blackberries.
  8. Pour the cream cheese mix over the crust in the pan.
  9. Bake for 50-60 minutes, or until the center is set but slightly jiggly.
  10. Let cool, then put in the fridge for at least 4 hours before you cut and serve.

Notes

Use room temperature cream cheese for a smooth mix. Tap the pan to release air bubbles before baking. If the top starts to brown, cover with foil near the end of baking.
