Description

A light and refreshing pudding made with chia seeds and blueberries, perfect for breakfast or as a snack.


Ingredients

  • 1 cup almond milk
  • 1/4 cup chia seeds
  • 1 cup blueberries
  • 2 tablespoons maple syrup (optional)
  • 1/4 cup coconut cream (optional)
  • 1 teaspoon vanilla extract

Instructions

  1. In a mixing bowl, combine almond milk, chia seeds, maple syrup, and vanilla extract. Stir well until the chia seeds are evenly distributed.
  2. Add blueberries and mix gently.
  3. Cover the bowl and refrigerate for at least 4 hours or overnight to allow the pudding to thicken.
  4. When ready to serve, stir the pudding and top with coconut cream if desired.
  5. Spoon the pudding into bowls or jars. Add a dollop of coconut cream on top and serve cold.

Notes

Stir the mix well at first to prevent clumping. Use frozen blueberries if fresh are not available. Adjust sweetness to your taste.
