Description

These blueberry scones are easy and light, perfect for breakfast or a snack, featuring fresh berries and a delightful lemon glaze.


Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 cup fresh blueberries
  • 2/3 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 lemon (for glaze)
  • 1 cup powdered sugar (for glaze)

Instructions

  1. Preheat the oven to 400ยฐF (200ยฐC).
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the blueberries.
  5. In a separate bowl, mix the cream and vanilla extract, then add to the flour mixture, stirring until just combined.
  6. Turn the dough onto a lightly floured surface and pat into a circle about 1 inch thick.
  7. Cut into wedges or desired shapes.
  8. Place on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden.
  9. For the lemon glaze, whisk together powdered sugar and lemon juice to the desired consistency, then drizzle over the scones once they have cooled.

Notes

Keep the butter very cold for flaky scones. Use fresh blueberries for the best texture.
