Description

A hearty and flavorful dish combining chicken, sausage, shrimp, and beans, perfect for cozy dinners or game day gatherings.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 pound chicken breast, cooked and shredded
  • 1 cup andouille sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 4 cups chicken broth
  • 2 cans white beans, drained and rinsed
  • 1 can diced green chilies
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the shredded chicken, sliced sausage, and shrimp, cooking until the shrimp turns pink.
  5. Pour in the chicken broth and bring to a simmer.
  6. Add the white beans, diced green chilies, Cajun seasoning, cumin, salt, and pepper.
  7. Simmer for 20-30 minutes to let the flavors meld.
  8. Serve hot, garnished with chopped green onions.

Notes

For a spicier kick, add more Cajun seasoning or a dash of hot sauce. Use leftover rotisserie chicken to save time.
