- 1 cup shrimp, peeled and deveined
- 4 cups chicken broth
- 2 cans white beans, drained and rinsed
- 1 can diced green chilies
- 2 teaspoons Cajun seasoning
- 1 teaspoon cumin
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook for an additional minute.
- Add the shredded chicken, sliced sausage, and shrimp, cooking until the shrimp turns pink.
- Pour in the chicken broth and bring to a simmer.
- Add the white beans, diced green chilies, Cajun seasoning, cumin, salt, and pepper.
- Simmer for 20-30 minutes to let the flavors meld.
- Serve hot, garnished with chopped green onions.
Notes
For a spicier kick, add more Cajun seasoning or a dash of hot sauce. Use leftover rotisserie chicken to save time.
