- 2 ripe bananas, mashed
- 1 cup grated carrots
- 1/3 cup vegetable oil
- 2/3 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda

- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 1/2 cups all-purpose flour
- Optional: 1/2 cup chopped walnuts or pecans
Instructions
- Preheat your oven to 350ยฐF (175ยฐC). Grease a 9ร5 inch loaf pan.
- In a bowl, mix the mashed bananas with the grated carrots.
- In another bowl, whisk together the oil, sugar, egg, and vanilla extract until smooth.
- Add the banana and carrot mixture to the wet ingredients and stir.
- In a separate bowl, combine the baking soda, baking powder, salt, cinnamon, and flour.
- Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. If using, fold in the nuts.
- Pour the batter into the prepared loaf pan.
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
Notes
Use very ripe bananas for the best flavor and sweetness. Grate carrots finely for even distribution. Add spices like nutmeg or ginger for an extra kick.
