Description

A warm and cozy chicken wild rice soup that’s perfect for weeknights or entertaining guests, featuring a creamy base and hearty ingredients.


Ingredients

  • 2 large chicken breasts
  • 8 cups chicken broth
  • 1 2/3 cups uncooked wild rice blend
  • 1/4 cup + 2 tbsp all-purpose flour
  • 1/2 cup salted butter
  • 3 large stalks celery, diced
  • 4 large carrots, diced
  • 1/2 large yellow onion, diced
  • 2 cloves minced garlic
  • 1 tsp parsley
  • 3/4 tsp thyme
  • 1/2 tsp sage
  • Salt & black pepper, to taste
  • 2 cups heavy cream

Instructions

  1. Prepare the chicken: Bring a large pot of salted water to a boil. Gently lower in your chicken and cook for about 12-15 minutes, or until 165ยฐ F in the center. Let rest and shred the chicken.
  2. Add chicken to a large pot with the broth and bring to a boil. Stir in the rice, add salt and pepper to taste, cover, and remove from heat.
  3. Melt butter in a large saucepan over medium-high heat, then reduce heat and add garlic, onion, celery, carrots, and spices. Cook until vegetables start to soften, about 6-8 minutes.
  4. Stir in flour and cook for 5 minutes. Slowly stir in cream and cook for 3-4 more minutes to thicken the mixture.
  5. Stir this mixture into the pot with broth, rice, and chicken. Let simmer over low heat for 10-15 minutes, stirring occasionally, to warm through and ensure rice is cooked.
  6. Serve hot, optionally garnished with parsley or cream. Enjoy!

Notes

For added flavor, try adding a splash of lemon or hot sauce. This soup can be made ahead of time and stored for later.
