- 1 cup all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 3 large eggs
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- Powdered sugar for dusting
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- Optional: chocolate ganache for drizzling
Instructions
- Preheat your oven to 350ยฐF (175ยฐC) and grease a jelly roll pan. Line it with parchment paper.
- In a bowl, sift together flour, cocoa powder, baking powder, and salt.
- In another bowl, beat eggs and sugar together until thick and pale. Add in vanilla.
- Gently fold in the dry ingredients until just combined.
- Pour the batter into the prepared pan, spreading it evenly.
- Bake for 10-12 minutes, or until the cake springs back when lightly touched.
- Immediately transfer the cake onto a clean kitchen towel dusted with powdered sugar.
- Roll the cake up with the towel starting from the short side and let it cool completely.
- For the filling, whip the heavy cream with powdered sugar and vanilla until stiff peaks form.
- Unroll the cooled cake, spread the filling over it, and reroll the cake.
- Dust with powdered sugar or drizzle with chocolate ganache before serving.
