A delightful cake roll filled with soft caramel buttercream and topped with warm chocolate ganache and toasted pecans.

- 3 large eggs
- 1 3/4 cups Chocolate Cake Mix
- 1/3 cup water
- 2 tablespoons vegetable oil
- 1 tablespoon powdered sugar (for rolling)
- 1/2 cup unsalted butter, softened
- 1/4 cup caramel sauce
- 2 cups powdered sugar
- 1/2 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 1 cup chocolate chips
- 1 cup chopped toasted pecans
Instructions
- Preheat your oven to 350ยฐF (175ยฐC). Line a 15ร10-inch jelly roll pan with parchment paper and lightly grease the paper.
- In a large bowl, beat the eggs on high for 2โ3 minutes until pale and light.
- Add the chocolate cake mix, water, and vegetable oil. Stir until smooth.
- Pour the batter into the pan and spread it in a thin, even layer.
- Bake for 10โ12 minutes until the cake springs back to touch.
- Take the pan from the oven and lay a clean kitchen towel on your counter, dusting it with powdered sugar.
- Flip the cake onto the towel, peel off the parchment paper, and roll the cake with the towel from a short end. Let it cool while rolled.
- For the caramel buttercream, cream the softened butter until smooth. Add caramel sauce, powdered sugar, and vanilla. Beat until light and fluffy.
- For the chocolate ganache, heat the heavy cream until just simmering. Pour over chocolate chips in a bowl, let sit for 1โ2 minutes, then whisk until smooth.
- Unroll the cooled cake and spread the caramel buttercream on it evenly.
- Roll the cake back up without the towel, placing it seam-side down on a plate.
- Pour the chocolate ganache over the roll, letting it drip down the sides, and sprinkle with chopped toasted pecans.
- Chill in the fridge for at least 30 minutes to set the ganache.
Notes
Work fast when rolling the cake to prevent cracking. Use warm ganache for best results.
