- 1 box chocolate cake mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 large eggs
- 1 cup heavy cream
- 1 cup chocolate chips
- 1 pint fresh strawberries
- Powdered sugar (for dusting)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake pan with cupcake liners.
- In a large bowl, combine the chocolate cake mix, water, vegetable oil, and eggs. Mix until smooth.
- Fill each cupcake liner about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick comes out clean. Allow to cool completely.
- In a saucepan, heat the heavy cream until simmering, then pour over the chocolate chips in a bowl. Let sit for a few minutes, then stir until smooth to create ganache.
- Dip each strawberry into the ganache, allowing excess to drip off.
- Once the cupcakes are cool, frost with remaining ganache and top with chocolate-covered strawberries.
- Dust with powdered sugar before serving. Enjoy!
