Description
Delicious cupcakes combining rich chocolate cake and sweet strawberry frosting, topped with a chocolate-covered strawberry.

- 1 1/2 cups all-purpose flour
- 1/2 cup cocoa powder
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup hot water
- 1/2 cup strawberry frosting
- Chocolate-covered strawberries for topping
Instructions
- Preheat the oven to 350ยฐF (175ยฐC). Line a cupcake tray with liners.
- In a bowl, mix flour, cocoa powder, baking powder, baking soda, and salt.
- In another bowl, cream the softened butter and sugar until light and fluffy.
- Add eggs one at a time, then stir in the vanilla extract.
- Add the dry mix to the wet mix gradually, alternating with the milk and hot water. Mix until just combined.
- Fill each liner about two-thirds full with the batter. Bake for 18โ20 minutes, or until a toothpick comes out clean.
- Let the cupcakes cool completely.
- Frost each cupcake with strawberry frosting and top with a chocolate-covered strawberry.
Notes
Use room temperature eggs and butter for a smooth mixture. Cool the cupcakes well before frosting to keep the frosting smooth.
