- 1 ยฝ cups all-purpose flour
- 1 cup granulated sugar
- ยฝ cup unsweetened cocoa powder
- 1 tsp baking powder
- 1 tsp baking soda
- ยฝ tsp salt
- 2 large eggs
- 1 cup whole milk
- ยฝ cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 12 fresh strawberries
- 1 cup semi-sweet chocolate chips
- ยฝ cup heavy cream
- ยฝ cup butter
- 2 cups powdered sugar
Instructions
- Preheat the oven to 350ยฐF and line a cupcake tray with paper liners.
- In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until well mixed.
- In another bowl, mix together eggs, milk, oil, and vanilla extract until smooth.
- Pour the wet ingredients into the dry ones and stir until combined into a thick batter.
- Carefully pour in the boiling water, stirring gently until the batter is smooth and shiny.
- Pour the batter into the cupcake liners, filling each about two-thirds full.
- Bake for about 20 minutes or until a toothpick comes out clean.
- Let the cupcakes cool on a wire rack.
- Wash and dry the strawberries; set aside.
- Melt chocolate chips with heavy cream in a heatproof bowl until smooth.
- Dip each strawberry into the melted chocolate and place on parchment paper to set.
- Beat butter until creamy, then slowly add powdered sugar and vanilla until fluffy.
- Frost each cooled cupcake with the prepared frosting.
- Top each cupcake with a chocolate-covered strawberry.
- Drizzle melted chocolate over the cupcakes, if desired.
- Let the cupcakes sit for 10 minutes before serving.
Notes
Use ripe but firm strawberries for better shape. Melt chocolate slowly to avoid burning.
