Description

Ingredients

  • 1 cup wheat bran
  • ¾ cup chopped pitted dates
  • 1 cup whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • 1 cup milk (dairy or plant-based)
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • ½ cup dark chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a large bowl, soak wheat bran in milk for 10 minutes.
  3. In a separate bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
  4. To the bran mixture, add eggs, applesauce, vanilla extract, and chopped dates. Stir to combine.
  5. Fold in the dry ingredients just until no dry streaks remain. Mix in chocolate chips if using.
  6. Spoon batter into muffin cups, filling each about ¾ full.
  7. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  8. Let muffins cool in the tin for 5 minutes before transferring to a wire rack.
