- 1 cup wheat bran
- ¾ cup chopped pitted dates
- 1 cup whole wheat flour
- ¼ cup unsweetened cocoa powder
- 1 tsp baking soda
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- 1 cup milk (dairy or plant-based)
- ½ cup unsweetened applesauce
- 1 tsp vanilla extract
- ½ cup dark chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
- In a large bowl, soak wheat bran in milk for 10 minutes.
- In a separate bowl, whisk flour, cocoa powder, baking soda, baking powder, and salt.
- To the bran mixture, add eggs, applesauce, vanilla extract, and chopped dates. Stir to combine.
- Fold in the dry ingredients just until no dry streaks remain. Mix in chocolate chips if using.
- Spoon batter into muffin cups, filling each about ¾ full.
- Bake for 18–22 minutes or until a toothpick inserted comes out clean.
- Let muffins cool in the tin for 5 minutes before transferring to a wire rack.

- Soaking the bran helps keep muffins moist.
- Store in an airtight container for 3 days or freeze for up to 3 months.
- To make it vegan, use flax eggs and plant-based milk.
