Description

Delicious cupcakes topped with strawberry buttercream and dipped in rich chocolate, perfect for parties or as a special treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup buttermilk
  • 1 large egg
  • 1 cup strawberries, chopped
  • 1/2 cup chocolate chips (for dipping)
  • Strawberry buttercream frosting (for topping)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line a cupcake pan with liners.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking soda, and salt.
  3. Add oil, vanilla extract, buttermilk, and egg, then mix until smooth.
  4. Fold in the chopped strawberries.
  5. Fill each cupcake liner about 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely.
  8. For the buttercream, blend butter and powdered sugar, then mix in pureed strawberries.
  9. Frost the cooled cupcakes with strawberry buttercream.
  10. Melt chocolate chips and dip the tops of the frosted cupcakes into the chocolate.
  11. Let the chocolate set before serving.

Notes

Use ripe strawberries for the best taste. Do not overmix the batter. Cool the cupcakes fully before frosting.
