Description

Delicious chocolate cupcakes topped with fresh strawberries dipped in chocolate, perfect for parties or gifts.


Ingredients

  • 1 and 3/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 3/4 cup cocoa powder
  • 1 and 1/2 teaspoons baking powder
  • 1 and 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • Chocolate for dipping
  • Strawberries for garnish

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and line a muffin tin with cupcake liners.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla; mix until well combined.
  4. Stir in boiling water until the batter is smooth.
  5. Fill each cupcake liner 2/3 full with batter.
  6. Bake for 18-20 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely.
  8. Melt chocolate in a microwave-safe bowl.
  9. Dip each strawberry into the melted chocolate, then place them on a parchment-lined tray to set.
  10. Once cupcakes are cool, dip the tops in the remaining chocolate or drizzle melted chocolate over each cupcake.
  11. Top with the chocolate-dipped strawberries and serve.

Notes

Use ripe but firm strawberries for a good look. Allow cupcakes to cool completely before adding warm chocolate.
