Description

A rich and indulgent cake featuring a warm fudge center that melts when baked.


Ingredients

Scale
  • 1 cup all purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup oil (or melted butter)
  • 1 tsp vanilla
  • 6 oz dark chocolate, chopped
  • 1/3 cup heavy cream (for fudge)
  • 2 tbsp butter (for fudge)

Instructions

  1. Preheat oven to 375ยฐF (190ยฐC). Grease six small ramekins.
  2. Mix flour, cocoa, baking powder, salt, and sugar in a bowl.
  3. In another bowl, whisk eggs, milk, oil, and vanilla.
  4. Stir the wet mix into the dry mix until smooth.
  5. Pour batter into ramekins until half full.
  6. To make fudge center, heat chocolate, cream, and butter in a small pan on low; stir until smooth.
  7. Drop one tablespoon of hot fudge into each ramekin on top of batter.
  8. Bake for 10โ€“12 minutes; the edges should set while the center remains soft.
  9. Let cakes cool for 2 minutes, then run a knife around the edges and tip out onto a plate.
  10. Serve warm.

Notes

Use good dark chocolate for a richer taste. Do not overbakeโ€”the cakes should be removed when the top looks set but not dry.
