Description
A rich and indulgent cake featuring a warm fudge center that melts when baked.
Ingredients

- 1 cup all purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking powder
- 1/2 tsp salt
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup milk
- 1/4 cup oil (or melted butter)
- 1 tsp vanilla
- 6 oz dark chocolate, chopped
- 1/3 cup heavy cream (for fudge)
- 2 tbsp butter (for fudge)
Instructions
- Preheat oven to 375ยฐF (190ยฐC). Grease six small ramekins.
- Mix flour, cocoa, baking powder, salt, and sugar in a bowl.
- In another bowl, whisk eggs, milk, oil, and vanilla.
- Stir the wet mix into the dry mix until smooth.
- Pour batter into ramekins until half full.
- To make fudge center, heat chocolate, cream, and butter in a small pan on low; stir until smooth.
- Drop one tablespoon of hot fudge into each ramekin on top of batter.
- Bake for 10โ12 minutes; the edges should set while the center remains soft.
- Let cakes cool for 2 minutes, then run a knife around the edges and tip out onto a plate.
- Serve warm.
Notes
Use good dark chocolate for a richer taste. Do not overbakeโthe cakes should be removed when the top looks set but not dry.
