These Chocolate Mint Cookies are soft, rich, and cool, perfect for a snack or a gift.

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup packed brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 3 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup chocolate chips
- 1/2 cup mint chocolate chips or a small amount of peppermint extract
- 1 cup powdered sugar (for decoration, optional)
Instructions
- Preheat your oven to 350°F (175°C).
- Cream together the softened butter, granulated sugar, and brown sugar until smooth.
- Beat in the eggs one at a time, then stir in the vanilla.
- Mix together the flour, baking soda, and salt in a separate bowl.
- Gradually blend the dry ingredients into the creamed mixture.
- Fold in the chocolate chips and mint chocolate chips (or add peppermint extract to taste).
- Drop rounded tablespoons of dough onto ungreased cookie sheets.
- Bake for 10–12 minutes in the preheated oven, or until the edges are nicely golden.
- Let the cookies cool on the sheet for a few minutes, then move them to a wire rack to cool more.
- Dust with powdered sugar before you serve (optional).
Notes
Use room temperature butter for the best mix, and do not overmix the dough after adding the flour.
