Description

These Chocolate Mint Cookies are soft, rich, and cool, perfect for a snack or a gift.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup chocolate chips
  • 1/2 cup mint chocolate chips or a small amount of peppermint extract
  • 1 cup powdered sugar (for decoration, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream together the softened butter, granulated sugar, and brown sugar until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla.
  4. Mix together the flour, baking soda, and salt in a separate bowl.
  5. Gradually blend the dry ingredients into the creamed mixture.
  6. Fold in the chocolate chips and mint chocolate chips (or add peppermint extract to taste).
  7. Drop rounded tablespoons of dough onto ungreased cookie sheets.
  8. Bake for 10–12 minutes in the preheated oven, or until the edges are nicely golden.
  9. Let the cookies cool on the sheet for a few minutes, then move them to a wire rack to cool more.
  10. Dust with powdered sugar before you serve (optional).

Notes

Use room temperature butter for the best mix, and do not overmix the dough after adding the flour.
