Description

Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup creamy peanut butter
  • 1/2 cup powdered sugar
  • 1 cup heavy cream

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and grease a baking sheet, lining it with parchment paper.
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, and salt; set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Stir in vanilla extract and milk until the mixture is smooth.
  6. Fold the dry ingredients into the wet ingredients gradually until just combined.
  7. Pour the batter onto the prepared sheet, spreading it evenly into a thin layer.
  8. Bake for 12โ€“15 minutes until a toothpick inserted in the center comes out clean.
  9. Allow the cake to cool slightly before preparing the filling.
  10. Blend the creamy peanut butter and powdered sugar in a separate bowl until smooth.
  11. Whip the heavy cream in another bowl until soft peaks form, then fold it into the peanut butter mixture.
  12. Once cooled, turn the cake out onto a clean towel dusted with cocoa powder, and peel off the parchment paper.
  13. Spread the peanut butter filling evenly over the cake.
  14. Using the towel, roll the cake tightly into a log shape.
  15. Wrap the rolled cake in plastic wrap and chill in the refrigerator for at least one hour.
  16. Slice and serve the cake as desired.

Notes

For best results, use fresh eggs and soft butter. Avoid overmixing the batter.
