Description

These easy-to-make Chocolate Raspberry Crumb Bars combine a sweet tart raspberry filling with a crumbly chocolate topping, perfect for sharing.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh raspberries
  • 1/2 cup chocolate chips
  • 1 tablespoon lemon juice

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease a baking dish.
  2. In a bowl, mix flour, oats, brown sugar, granulated sugar, baking soda, and salt.
  3. Add softened butter and mix until crumbly.
  4. Press half of the crumb mixture into the bottom of the baking dish.
  5. In another bowl, toss fresh raspberries with lemon juice and half of the chocolate chips.
  6. Spread the raspberry mixture over the crust.
  7. Sprinkle the remaining crumb mixture and chocolate chips on top.
  8. Bake for 25-30 minutes, until golden brown.
  9. Allow to cool before cutting into bars. Enjoy!

Notes

Serve at room temperature. A scoop of vanilla ice cream pairs beautifully with the warm bars.
