Description

A rich and moist chocolate cake topped with a smooth ganache and fresh raspberries, perfect for celebrations or a delightful treat at home.


Ingredients

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons baking soda
  • 1 teaspoon salt
  • 2 large eggs
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1 cup heavy cream
  • 8 ounces semisweet chocolate, chopped
  • Fresh raspberries for topping

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. In a large bowl, combine flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add eggs, milk, oil, and vanilla to the dry ingredients and mix until smooth. Pour in boiling water and stir until well combined.
  4. Divide the batter evenly between the prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pans for 10 minutes, then turn out onto a wire rack to cool completely.
  5. For the ganache, heat heavy cream in a saucepan until just boiling. Pour over chopped chocolate in a bowl and let sit for 5 minutes, then stir until smooth. Allow to cool slightly to thicken.
  6. Once the cakes are completely cooled, place one layer on a serving plate, spread a layer of ganache over it, then top with fresh raspberries. Place the second cake layer on top.
  7. Pour the ganache over the top of the cake, allowing it to drip down the sides.
  8. Top with additional fresh raspberries.
  9. Slice and serve to enjoy your delightful chocolate raspberry drip cake!

Notes

Use room temperature eggs and milk for better mixing. Let the cake cool completely before adding ganache.
