- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 tsp vanilla extract
- 1/2 cup fresh strawberries, diced
- 1 cup chocolate frosting
- Fresh strawberries for garnishing
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and line a cupcake tray with paper liners.
- In a large bowl, mix together the flour, sugar, cocoa powder, baking soda, and salt.
- Add the softened butter, eggs, milk, and vanilla extract to the dry ingredients and mix until smooth.
- Gently fold in the diced strawberries.
- Pour the batter into the prepared cupcake liners, filling each about 2/3 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow cupcakes to cool completely.
- Once cooled, frost each cupcake with chocolate frosting and top with a slice of fresh strawberry.
Notes
Use room temperature butter and eggs for a smooth batter. Do not over mix after adding flour. Cool cupcakes completely before adding frosting.
