Description

A holiday cake that perfectly combines the flavors of carrot, pineapple, and warm spices for a delightful treat.


Ingredients

  • 2 cups grated carrots
  • 1 cup crushed pineapple (drained)
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup shredded coconut (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC). Grease and flour a 9×13-inch baking pan.
  2. In a large bowl, mix together the grated carrots, crushed pineapple, granulated sugar, brown sugar, and vegetable oil.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the chopped nuts and shredded coconut if using.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Serve with a dollop of cream or simple cream cheese icing. The cake pairs well with hot tea or coffee.
