- 2 cups All-Purpose Flour (or gluten-free mix)
- 1 cup Unsalted Butter (softened)
- 1.5 cups Sugar (white or brown)
- 3 large Eggs (room temperature)
- 2 teaspoons Vanilla Extract (or almond extract)
- 2 teaspoons Baking Powder (fresh)
- 0.5 teaspoon Salt
- 1 cup Toffee Bits (or chocolate/butterscotch chips)
- 0.5 cup Chopped Nuts (pecans or walnuts)
Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease a 9-inch cake pan.
- Sift together the flour, baking powder, and salt in a bowl, then set aside.
- Beat the softened butter with the sugar until light and smooth.
- Add the eggs one at a time, beating well after each addition.
- Stir in the vanilla extract.
- In two parts, add the dry mix and fold until just combined.
- By hand, stir in the toffee bits and chopped nuts, being careful not to overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for 30 to 40 minutes or until a toothpick near the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a rack to cool completely.
Notes
Serve with warm tea or cold milk, and consider adding a scoop of vanilla ice cream on the side.
