- 8 ounces semi-sweet chocolate

Instructions
- Preheat the oven to 350ยฐF (175ยฐC) and grease a 10ร15 inch jelly roll pan. Line it with parchment paper and grease the parchment.
- In a bowl, beat the eggs and sugar until pale and fluffy.
- Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold this into the egg mixture.
- Pour the batter into the prepared pan and spread it evenly.
- Bake for 12-15 minutes, until the cake springs back when pressed.
- Immediately turn it out onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment and roll the cake in the towel to cool.
- Meanwhile, whip the cream with the powdered sugar and vanilla until soft peaks form.
- Unroll the cake, spread the whipped cream evenly, and roll it back up without the towel.
- For the ganache, melt the chocolate and butter together, stirring until smooth.
- Pour the ganache over the rolled cake, allowing it to drip down the sides.
- Decorate to resemble a log using a fork to create bark effects, and add any additional decorations.
- Chill in the refrigerator until ready to serve. Slice and enjoy!
Notes
Cool the cake before filling to prevent melting. Use a sugared towel to assist rolling.
