Description

A delightful chocolate and cream cake that resembles a log, perfect for holiday gatherings.


Ingredients

  • 4 large eggs
  • 1 cup granulated sugar
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 8 ounces semi-sweet chocolate
  • 1/2 cup unsalted butter
  • Decorative elements (e.g., powdered sugar, berries, or meringue mushrooms)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC) and grease a 10ร—15 inch jelly roll pan. Line it with parchment paper and grease the parchment.
  2. In a bowl, beat the eggs and sugar until pale and fluffy.
  3. Sift together the flour, cocoa powder, baking powder, and salt. Gradually fold this into the egg mixture.
  4. Pour the batter into the prepared pan and spread it evenly.
  5. Bake for 12-15 minutes, until the cake springs back when pressed.
  6. Immediately turn it out onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment and roll the cake in the towel to cool.
  7. Meanwhile, whip the cream with the powdered sugar and vanilla until soft peaks form.
  8. Unroll the cake, spread the whipped cream evenly, and roll it back up without the towel.
  9. For the ganache, melt the chocolate and butter together, stirring until smooth.
  10. Pour the ganache over the rolled cake, allowing it to drip down the sides.
  11. Decorate to resemble a log using a fork to create bark effects, and add any additional decorations.
  12. Chill in the refrigerator until ready to serve. Slice and enjoy!

Notes

Cool the cake before filling to prevent melting. Use a sugared towel to assist rolling.
