Description
A warm and comforting chicken soup with potatoes, perfect for chilly days.
Ingredients

- 1 whole chicken (about 3–4 pounds)
- 4 cups of chicken broth
- 4 medium potatoes, peeled and diced
- 2 carrots, sliced
- 1 onion, chopped
- 3 garlic cloves, minced
- 2 tablespoons of olive oil
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the whole chicken to the pot and pour in the chicken broth. Bring to a boil.
- Once boiling, reduce the heat to low and let it simmer for about 30 minutes.
- Carefully remove the chicken from the pot and let it cool slightly. Once cool enough to handle, shred the chicken into small pieces.
- Return the shredded chicken to the pot. Add the diced potatoes and sliced carrots.
- Simmer for an additional 20 minutes, or until the potatoes are tender.
- Season with salt and pepper to taste. If desired, garnish with fresh parsley before serving.
Notes
For a richer flavor, you can use homemade chicken broth. Add favorite vegetables for extra nutrition.
