Description

A warm and comforting chicken soup with potatoes, perfect for chilly days.


Ingredients

Scale
  • 1 whole chicken (about 34 pounds)
  • 4 cups of chicken broth
  • 4 medium potatoes, peeled and diced
  • 2 carrots, sliced
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
  2. Add the whole chicken to the pot and pour in the chicken broth. Bring to a boil.
  3. Once boiling, reduce the heat to low and let it simmer for about 30 minutes.
  4. Carefully remove the chicken from the pot and let it cool slightly. Once cool enough to handle, shred the chicken into small pieces.
  5. Return the shredded chicken to the pot. Add the diced potatoes and sliced carrots.
  6. Simmer for an additional 20 minutes, or until the potatoes are tender.
  7. Season with salt and pepper to taste. If desired, garnish with fresh parsley before serving.

Notes

For a richer flavor, you can use homemade chicken broth. Add favorite vegetables for extra nutrition.
