Description
These sweet, soft cheesecake bars topped with fresh strawberries are an easy and delicious dessert perfect for sharing.

- 2 cups graham cracker crumbs (about 16 full crackers)
- 1/2 cup unsalted butter, melted
- 16 oz (450 g) cream cheese, room temperature
- 1 cup sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup sour cream
- 1 tbsp lemon juice
- 2 cups fresh strawberries, chopped
- 1/4 cup strawberry jam (optional for glaze)

Instructions
- Preheat the oven to 325°F (160°C). Line an 8×8 inch pan with foil and leave extra on sides to lift bars out.
- Mix graham crumbs, melted butter, and a pinch of salt. Press this mix into the bottom of the pan to make a firm crust.
- Beat the cream cheese and sugar until smooth and no lumps remain.
- Add eggs one at a time. Mix in vanilla, sour cream, and lemon juice. Scrape the bowl to mix well.
- Pour the cream cheese mix over the crust and spread smooth.
- Bake for 30 to 35 minutes, until the edges set and the center is a bit jiggly.
- Let the pan cool on a wire rack for an hour, then chill in the fridge for at least 3 hours or overnight.
- Toss the chopped strawberries with a little jam or sugar if desired.
- Spread the strawberries on the chilled cheesecake and press gently.
- Lift the bars from the pan, cut into squares, and serve.
Notes
Serve cold for the best texture. For a crunchy finish, consider adding fresh strawberries or a light dusting of powdered sugar.
