Description

These sweet, soft cheesecake bars topped with fresh strawberries are an easy and delicious dessert perfect for sharing.

Ingredients

Scale
  • 2 cups graham cracker crumbs (about 16 full crackers)
  • 1/2 cup unsalted butter, melted
  • 16 oz (450 g) cream cheese, room temperature
  • 1 cup sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup sour cream
  • 1 tbsp lemon juice
  • 2 cups fresh strawberries, chopped
  • 1/4 cup strawberry jam (optional for glaze)
  • pinch of salt

Instructions

  1. Preheat the oven to 325°F (160°C). Line an 8×8 inch pan with foil and leave extra on sides to lift bars out.
  2. Mix graham crumbs, melted butter, and a pinch of salt. Press this mix into the bottom of the pan to make a firm crust.
  3. Beat the cream cheese and sugar until smooth and no lumps remain.
  4. Add eggs one at a time. Mix in vanilla, sour cream, and lemon juice. Scrape the bowl to mix well.
  5. Pour the cream cheese mix over the crust and spread smooth.
  6. Bake for 30 to 35 minutes, until the edges set and the center is a bit jiggly.
  7. Let the pan cool on a wire rack for an hour, then chill in the fridge for at least 3 hours or overnight.
  8. Toss the chopped strawberries with a little jam or sugar if desired.
  9. Spread the strawberries on the chilled cheesecake and press gently.
  10. Lift the bars from the pan, cut into squares, and serve.

Notes

Serve cold for the best texture. For a crunchy finish, consider adding fresh strawberries or a light dusting of powdered sugar.
