- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/4 cup buttermilk (or 1/4 cup milk + 1 tsp lemon juice or vinegar)
- 1 large egg
- 1 teaspoon vanilla extract
- Gel food coloring (pink and blue)
- Cotton candy flavoring (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment.
- Mix the dry ingredients. In a bowl, stir the flour, baking powder, baking soda, and salt. Set aside.
- Cream butter and sugar. In a large bowl, beat the butter and sugar until the mix looks light and smooth.
- Add the wet ingredients. Beat in the egg and vanilla. Add the buttermilk and a small drop of cotton candy flavor, if you use it.
- Combine dry and wet ingredients. Add the dry mix to the wet mix in two parts. Stir until the dough looks even.
- Divide and color the dough. Split the dough into two equal parts. Add pink gel to one part and blue gel to the other. Mix until the color is even.
- Form the cotton candy cookies. Roll small balls from each color. Press one pink ball and one blue ball together and then gently flatten to make a swirl look.
- Bake. Place the cookies on the sheet and bake for 10 to 12 minutes, or until the edges look set but the center is soft.
- Cool and serve. Let the cookies cool on the sheet for a few minutes. Move them to a rack to finish cooling.
Notes
Store cookies in an airtight box at room temperature for up to 3 days. For longer life, put them in the fridge for up to 1 week or freeze them for up to 3 months.
