A warm and comforting Italian soup featuring Italian sausage, creamy potatoes, and leafy greens, perfect for chilly evenings.


Ingredients

  • 1 lb Italian sausage (mild or spicy)
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, diced (Yukon Gold or Russet)
  • 4 cups chicken broth
  • 1 cup heavy cream (or half-and-half)
  • 2 cups kale or spinach, chopped
  • ยฝ tsp salt (adjust to taste)
  • ยฝ tsp black pepper
  • ยผ tsp crushed red pepper flakes (optional)
  • 1 tbsp olive oil (if needed, for sautรฉing)
  • ยฝ cup grated Parmesan cheese (for garnish)

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned. Add the diced onion and minced garlic; sautรฉ until the onion is translucent.
  2. Add the diced potatoes and chicken broth; bring to a boil. Lower heat and simmer until potatoes are tender, about 15-20 minutes.
  3. Stir in the heavy cream, chopped kale (or spinach), salt, black pepper, and red pepper flakes if using. Cook for another 5 minutes until greens are wilted.
  4. Serve hot, ladle into bowls, and garnish with grated Parmesan cheese.

Notes

For a thicker soup, mash some of the potatoes while it cooks. Feel free to add more vegetables like carrots or celery for extra nutrition.
