- 1 lb Italian sausage (mild or spicy)
- 1 small onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, diced (Yukon Gold or Russet)
- 4 cups chicken broth
- 1 cup heavy cream (or half-and-half)
- 2 cups kale or spinach, chopped
- ยฝ tsp salt (adjust to taste)
- ยฝ tsp black pepper
- ยผ tsp crushed red pepper flakes (optional)
- 1 tbsp olive oil (if needed, for sautรฉing)
- ยฝ cup grated Parmesan cheese (for garnish)
Instructions
- In a large pot, heat the olive oil over medium heat. Add the Italian sausage, breaking it apart with a spoon, and cook until browned. Add the diced onion and minced garlic; sautรฉ until the onion is translucent.
- Add the diced potatoes and chicken broth; bring to a boil. Lower heat and simmer until potatoes are tender, about 15-20 minutes.
- Stir in the heavy cream, chopped kale (or spinach), salt, black pepper, and red pepper flakes if using. Cook for another 5 minutes until greens are wilted.
- Serve hot, ladle into bowls, and garnish with grated Parmesan cheese.
Notes
For a thicker soup, mash some of the potatoes while it cooks. Feel free to add more vegetables like carrots or celery for extra nutrition.
