This Cranberry Orange Chicken combines tart cranberries and sweet orange for a flavorful one-pan meal baked to perfection.

- 4 chicken breasts
- 1 cup fresh or frozen cranberries
- 1 orange, zested and juiced
- 1/2 cup chicken broth
- 1/4 cup honey
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- In a large oven-safe skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper, and brown them in the skillet for about 4-5 minutes on each side.
- In a bowl, combine cranberries, orange zest, orange juice, chicken broth, and honey.
- Pour the cranberry-orange mixture over the browned chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes or until chicken is cooked through.
- Garnish with fresh parsley before serving.
Notes
Use fresh orange juice for the best taste. If using frozen cranberries, do not thaw them first. Taste the sauce before baking and adjust sweetness with honey.
