- 4 chicken breasts
- 1 cup fresh cranberries
- 1 orange, juiced and zested
- 1/4 cup brown sugar
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon rosemary (optional)
Instructions
- Preheat the oven to 375ยฐF (190ยฐC).
- In a saucepan, combine cranberries, orange juice, orange zest, brown sugar, salt, pepper, garlic powder, and rosemary. Cook over medium heat until the cranberries burst and the sauce thickens, about 10-15 minutes.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 3-4 minutes on each side until golden brown.
- Pour the cranberry orange sauce over the chicken in the skillet.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC).
- Let it rest for a few minutes before serving.
Notes
Serve over rice or with roasted potatoes. Can be stored in the fridge for 3-4 days or frozen for up to 3 months.
