Description

A delightful sweet and tart dish featuring fresh cranberries and orange, perfect for a festive meal.


Ingredients

  • 4 chicken breasts
  • 1 cup fresh cranberries
  • 1 orange, juiced and zested
  • 1/4 cup brown sugar
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon rosemary (optional)

Instructions

  1. Preheat the oven to 375ยฐF (190ยฐC).
  2. In a saucepan, combine cranberries, orange juice, orange zest, brown sugar, salt, pepper, garlic powder, and rosemary. Cook over medium heat until the cranberries burst and the sauce thickens, about 10-15 minutes.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat. Season the chicken breasts with salt and pepper, then sear them in the skillet for 3-4 minutes on each side until golden brown.
  4. Pour the cranberry orange sauce over the chicken in the skillet.
  5. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165ยฐF (74ยฐC).
  6. Let it rest for a few minutes before serving.

Notes

Serve over rice or with roasted potatoes. Can be stored in the fridge for 3-4 days or frozen for up to 3 months.
