- 2 Chicken breasts
- 1 cup Mushrooms, sliced
- 1/2 cup Heavy cream
- 2 cloves Garlic, minced
- 1 Onion, chopped
- 1 cup Chicken broth
- 2 cups Spinach
- 2 tbsp Olive oil
- Salt, to taste
- Pepper, to taste
- 1 tsp Italian seasoning
Instructions
- In a large skillet, heat olive oil over medium heat.
- Season chicken breasts with salt and pepper, and cook until browned and cooked through. Remove from skillet and set aside.
- In the same skillet, add garlic and onions; sautรฉ until fragrant.
- Add mushrooms and cook until softened.
- Stir in chicken broth and bring to a simmer.
- Reduce heat, add heavy cream, and let it simmer to thicken.
- Stir in spinach until wilted.
- Return chicken to the skillet and coat with the sauce.
- Sprinkle with Italian seasoning and serve hot.
Notes
For the best flavor, use fresh mushrooms. Adjust the amount of heavy cream for a richer sauce or experiment with herbs like thyme or rosemary.
