Description

Soft and tender cookies combining banana bread flavors with a creamy glaze.


Ingredients

  • 1 cup mashed bananas
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped walnuts or chocolate chips (optional)
  • 4 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tablespoon milk
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  3. Stir in the mashed bananas, egg, and vanilla extract until well combined.
  4. Whisk together the flour, baking soda, and salt in a separate bowl. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the chopped walnuts or chocolate chips if using.
  6. Drop spoonfuls of dough onto the prepared baking sheet and bake for 12-15 minutes, or until the edges are lightly golden.
  7. Allow cookies to cool completely.
  8. Beat the cream cheese until smooth, then mix in the powdered sugar, milk, and vanilla extract until creamy.
  9. Drizzle the glaze over the cooled cookies before serving.

Notes

For a tangy glaze, add a little lemon juice to the cream cheese mix. Do not over mix the dough.
