Description

A warm and flavorful Christmas cake packed with dried fruits and nuts, perfect for family gatherings and as a thoughtful gift.


Ingredients

Scale
  • 300 g Mixed Dried Fruits (raisins, sultanas, or cherries)
  • 150 g Nuts (almonds, walnuts, or pecans)
  • 1 teaspoon Spices (cinnamon, nutmeg)
  • 250 g Unsalted Butter
  • 3 large Eggs (room temperature)
  • 200 g All-purpose or gluten-free Flour
  • 200 g Brown Sugar (or coconut sugar)
  • 1 teaspoon Baking Powder
  • 100 g Apricot Jam (for brushing)

Instructions

  1. Preheat oven to 160ยฐC fan / 180ยฐC / 350ยฐF and grease a deep 20 cm (8 in) cake tin.
  2. In a bowl, combine mixed dried fruit, nuts, and spices. Optionally, add 2-3 tbsp warm water or juice and let sit for 30 min.
  3. In a large bowl, beat together butter and brown sugar until pale and soft. Add eggs one at a time, beating well after each addition.
  4. Fold in flour and baking powder gently. Then add the fruit and nut mixture and stir until evenly mixed.
  5. Pour the mixture into the prepared tin, level the top, and tap on the counter to remove air bubbles.
  6. Bake for 60-90 minutes until a skewer comes out clean or with a few moist crumbs. Cover with foil if the top browns too quickly.
  7. Cool in the tin for 15 minutes, then turn out and let cool on a rack.
  8. Warm the apricot jam and brush it over the top of the cake before serving.

Notes

For best results, use room temperature ingredients and avoid over-mixing once the flour is added.
