A warm and flavorful Christmas cake packed with dried fruits and nuts, perfect for family gatherings and as a thoughtful gift.
Ingredients

- 300 g Mixed Dried Fruits (raisins, sultanas, or cherries)
- 150 g Nuts (almonds, walnuts, or pecans)
- 1 teaspoon Spices (cinnamon, nutmeg)
- 250 g Unsalted Butter
- 3 large Eggs (room temperature)
- 200 g All-purpose or gluten-free Flour
- 200 g Brown Sugar (or coconut sugar)
- 1 teaspoon Baking Powder
- 100 g Apricot Jam (for brushing)
Instructions
- Preheat oven to 160ยฐC fan / 180ยฐC / 350ยฐF and grease a deep 20 cm (8 in) cake tin.
- In a bowl, combine mixed dried fruit, nuts, and spices. Optionally, add 2-3 tbsp warm water or juice and let sit for 30 min.
- In a large bowl, beat together butter and brown sugar until pale and soft. Add eggs one at a time, beating well after each addition.
- Fold in flour and baking powder gently. Then add the fruit and nut mixture and stir until evenly mixed.
- Pour the mixture into the prepared tin, level the top, and tap on the counter to remove air bubbles.
- Bake for 60-90 minutes until a skewer comes out clean or with a few moist crumbs. Cover with foil if the top browns too quickly.
- Cool in the tin for 15 minutes, then turn out and let cool on a rack.
- Warm the apricot jam and brush it over the top of the cake before serving.
Notes
For best results, use room temperature ingredients and avoid over-mixing once the flour is added.
