Description

A soft and sweet holiday sheet cake shaped like a log, filled with cream and covered in chocolate glaze.


Ingredients

Scale
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 large eggs
  • 3/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 cup milk
  • 2 tablespoons cocoa powder (optional)
  • 1 cup heavy cream (for filling)
  • 2 tablespoons powdered sugar (for filling)
  • 1 cup chocolate chips or chopped chocolate (for glaze)
  • 2 tablespoons butter (for glaze)
  • A pinch of salt
  • Powdered sugar to dust
  • Small candies or holly leaves for top (optional)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease a rimmed baking sheet and line it with parchment paper.
  2. Whisk flour, baking powder, and salt in a bowl.
  3. In a separate bowl, beat eggs and sugar until thick and pale.
  4. Fold the dry mix into the eggs in small parts. Add milk and vanilla. Mix gently.
  5. If using cocoa, fold it in for a chocolate sponge.
  6. Spread the batter in the sheet in a thin, even layer.
  7. Bake for 10โ€“12 minutes until the cake springs back when touched.
  8. Lay a clean towel on the counter and dust it with powdered sugar. Turn the warm cake out on the towel. Peel off the paper.
  9. Roll the cake and towel together from the short side. Let it cool rolled.
  10. Whip heavy cream with powdered sugar until it holds soft peaks. Unroll the cooled cake. Spread the cream and roll back up without the towel.
  11. Melt chocolate and butter. Spread the glaze over the rolled cake.
  12. Use a fork to make bark lines in the glaze. Dust lightly with powdered sugar for a snow look. Add candies or leaves if desired.

Notes

Do not overbake the sponge. Roll the warm cake with a towel right away to set the shape. Use room temperature eggs for more air in the batter. For nut flavor, toast and chop almonds and fold small bits into the cream.
