Description

A soft, sweet cake with a crispy toffee bite, perfect for parties or a cozy night at home.


Ingredients

  • 1 cup unsalted butter, softened
  • 2 cups granulated sugar
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup buttermilk
  • 1 cup caramel sauce
  • 1 cup toffee bits
  • Chocolate frosting (optional)

Instructions

  1. Preheat the oven to 350ยฐF (175ยฐC). Grease and flour two 9-inch round cake pans.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add the eggs, one at a time, beating well after each addition. Stir in the vanilla.
  4. In another bowl, mix together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk.
  5. Fold in the caramel sauce and toffee bits, reserving some toffee bits for topping.
  6. Divide the batter evenly between the prepared cake pans.
  7. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.
  9. Once cooled, frost with chocolate frosting if desired and sprinkle with remaining toffee bits.
  10. Serve and enjoy!

Notes

For a creamier take, try using whipped cream instead of chocolate frosting. Store in a sealed box to keep fresh.
