Description

A rustic peach galette that comes together in just 15 minutes of prep. This easy dessert uses store-bought pastry and fresh peaches for a flaky, golden crust and juicy filling. Perfect for last-minute gatherings!


Ingredients

  • 2 medium ripe peaches, sliced thin
  • 1 sheet store-bought puff pastry or pie dough
  • 2 tbsp granulated sugar
  • 1 tsp cornstarch
  • 1 egg (for egg wash)
  • 1 tbsp water (for egg wash)
  • Optional: 1 tsp cinnamon, 1 tbsp honey, sliced almonds for topping

Instructions

  1. Preheat oven: to 400°F (200°C).
  2. Prepare peaches: Wash and thinly slice peaches. Toss with sugar and cornstarch in a small bowl.
  3. Roll dough: Unroll puff pastry on parchment paper. Lightly dust with flour.
  4. Assemble galette: Arrange peach slices in the center, leaving 2-inch border. Fold edges over filling.
  5. Brush crust: Mix egg and water for egg wash. Brush edges of dough for a golden finish.
  6. Bake: 20–25 minutes or until crust is golden and peaches are bubbling.
  7. Cool & serve: Let cool slightly. Serve warm with vanilla ice cream or whipped cream.

Notes

  • Chill the assembled galette for 10 minutes before baking for extra flakiness.
