- 2 medium ripe peaches, sliced thin
- 1 sheet store-bought puff pastry or pie dough
- 2 tbsp granulated sugar
- 1 tsp cornstarch
- 1 egg (for egg wash)
- 1 tbsp water (for egg wash)
- Optional: 1 tsp cinnamon, 1 tbsp honey, sliced almonds for topping
Instructions
- Preheat oven: to 400°F (200°C).
- Prepare peaches: Wash and thinly slice peaches. Toss with sugar and cornstarch in a small bowl.
- Roll dough: Unroll puff pastry on parchment paper. Lightly dust with flour.
- Assemble galette: Arrange peach slices in the center, leaving 2-inch border. Fold edges over filling.
- Brush crust: Mix egg and water for egg wash. Brush edges of dough for a golden finish.
- Bake: 20–25 minutes or until crust is golden and peaches are bubbling.
- Cool & serve: Let cool slightly. Serve warm with vanilla ice cream or whipped cream.
Notes
- Chill the assembled galette for 10 minutes before baking for extra flakiness.
- Add cinnamon or nutmeg for a spiced flavor.
- Store leftovers in an airtight container in the fridge for up to 2 days.
