- 175 g self-raising flour
- ยผ tsp salt
- โ tsp baking soda
- 175 g butter (cut into cubes and at room temperature)
- 175 g light brown sugar
- 3 large eggs (lightly beaten)
- 225 g bananas (without peel)
- 2 tsp lemon juice
Instructions
- Preheat the oven to 170ยฐC (340ยฐF) and position the oven rack in the lower third of the oven.
- Line a 7-inch (18-cm) baking pan with greaseproof paper and brush it with softened butter.
- Sift together the flour, salt, and baking soda in a bowl.
- In a small bowl, mash the bananas and stir in the lemon juice. Set aside.
- In a mixer, cream the butter and light brown sugar until light and fluffy.
- Gradually add the beaten eggs to the mixture, mixing well after each addition.
- Add half of the flour mixture, mixing until just combined.
- Add the mashed bananas and mix well.
- Incorporate the remaining flour mixture until just combined.
- Pour the batter into the prepared pan and bake for 45 to 50 minutes.
- Cool in the pan for 10 minutes before transferring it to a wire rack.
Notes
Serve warm or at room temperature. Pairs well with tea or coffee, and can be dusted with powdered sugar or served with ice cream.
