Description

A simple and delicious treat featuring moist and flavorful banana flavors, perfect for any occasion.


Ingredients

  • 175 g self-raising flour
  • ยผ tsp salt
  • โ…› tsp baking soda
  • 175 g butter (cut into cubes and at room temperature)
  • 175 g light brown sugar
  • 3 large eggs (lightly beaten)
  • 225 g bananas (without peel)
  • 2 tsp lemon juice

Instructions

  1. Preheat the oven to 170ยฐC (340ยฐF) and position the oven rack in the lower third of the oven.
  2. Line a 7-inch (18-cm) baking pan with greaseproof paper and brush it with softened butter.
  3. Sift together the flour, salt, and baking soda in a bowl.
  4. In a small bowl, mash the bananas and stir in the lemon juice. Set aside.
  5. In a mixer, cream the butter and light brown sugar until light and fluffy.
  6. Gradually add the beaten eggs to the mixture, mixing well after each addition.
  7. Add half of the flour mixture, mixing until just combined.
  8. Add the mashed bananas and mix well.
  9. Incorporate the remaining flour mixture until just combined.
  10. Pour the batter into the prepared pan and bake for 45 to 50 minutes.
  11. Cool in the pan for 10 minutes before transferring it to a wire rack.

Notes

Serve warm or at room temperature. Pairs well with tea or coffee, and can be dusted with powdered sugar or served with ice cream.
