Description

Cheesy Ground Beef Enchiladas are a one-pan family favorite packed with flavor. This comforting Mexican-inspired dinner features seasoned ground beef, soft tortillas, zesty enchilada sauce, and plenty of gooey melted cheese. Perfect for busy weeknights, meal prep, or when you need a budget-friendly dish that makes everyone happy.


Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt & pepper to taste
  • 1 can (15 oz) enchilada sauce
  • 8 medium flour tortillas (or corn)
  • 2 cups shredded cheddar or Mexican blend cheese
  • 1 can black beans (optional)
  • 1 cup corn kernels (optional)
  • Fresh cilantro, avocado, sour cream for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat olive oil in a skillet, cook onion and garlic until fragrant. Add ground beef and cook until browned. Season with chili powder, cumin, salt, and pepper.
  3. Stir in beans and corn if using. Remove from heat.
  4. Spread a thin layer of enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with beef mixture, roll tightly, and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the rolled tortillas and top with cheese.
  7. Bake uncovered for 20 minutes or until cheese is melted and bubbly.
  8. Garnish with cilantro, avocado, or sour cream before serving.

Notes

  • For extra flavor, lightly fry tortillas before filling.
  • Make ahead: Assemble enchiladas, cover tightly, and refrigerate overnight. Bake before serving.
  • To freeze: Assemble, wrap tightly in foil, and freeze for up to 3 months.
