Cheesy Ground Beef Enchiladas are a one-pan family favorite packed with flavor. - 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- Salt & pepper to taste
- 1 can (15 oz) enchilada sauce
- 8 medium flour tortillas (or corn)
- 2 cups shredded cheddar or Mexican blend cheese
- 1 can black beans (optional)
- 1 cup corn kernels (optional)
- Fresh cilantro, avocado, sour cream for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet, cook onion and garlic until fragrant. Add ground beef and cook until browned. Season with chili powder, cumin, salt, and pepper.
- Stir in beans and corn if using. Remove from heat.
- Spread a thin layer of enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with beef mixture, roll tightly, and place seam-side down in the dish.
- Pour remaining enchilada sauce over the rolled tortillas and top with cheese.
- Bake uncovered for 20 minutes or until cheese is melted and bubbly.
- Garnish with cilantro, avocado, or sour cream before serving.
Notes
- For extra flavor, lightly fry tortillas before filling.
- Make ahead: Assemble enchiladas, cover tightly, and refrigerate overnight. Bake before serving.
- To freeze: Assemble, wrap tightly in foil, and freeze for up to 3 months.
